Select Aperitivo is traditionally served in a Spritz mixed with 3 parts Prosecco, 2 parts Select and 1 part soda. The drink is accompanied by an orange wheel and olives. Venetians refer to drinks like this as “Shadows,” as they are often consumed during a reprieve from the hot Venetian sun in restaurants and cafes that lie in the shade of the St. Mark Bell Tower.
