Yellow Spot 12 Year Irish Whiskey
In 1805, the Mitchell merchant family commenced trading at 10 Grafton St in the heart of Dublin city as purveyors of confectionery, wines and fortified wines. In time, the family entered the whiskey bonding business and sold a range of whiskeys under their ‘Spot’ brand name. This rather peculiar name originated from their practice of marking casks of different ages with a daub or spot of colored paint with each color representing a particular age.
Inspired by the original Yellow Spot, this Single Pot Still Whiskey has been matured for not less than 12 years in a combination of American bourbon, Spanish sherry and Spanish Malaga casks. Drawing from the Mitchell family tradition of importing fortified wines, full term maturation in. ex Malaga casks contributes exotic sweet characteristics to the whiskey.
NOSE
Mown hay and cracked black pepper. Red bell peppers, nutmeg, clove oil & green tea. Sweet honey & peaches from the Malaga casks.
TASTE
Honey sweetness with pot still spices. Flavours of fresh coffee, creamy milk chocolate & Crème Brûlée. Notes of red apples & toasted oak.
FINISH
Sophisticated & complex. Sweetness throughout, with a mix of red grape & dry barley upon exit.
